White Bean and Artichoke Feta Wrap



Guess what's in season? Artichokes. My all time favorite vegetable packed with insane fiber and deliciousness. One of my goals has been to cut back on my meat intake while still getting all of my protein and fiber in for the day! This recipe is vegetarian, takes only 10 minutes to put together, and requires NO cooking! Make this as an easy, healthy meal prep, that is packed full of great nutrients! This is so filling, you will likely only be able to eat one! Healthy does not mean it has to be boring! Pile in artichokes, beans, sundried tomatoes, and arugula and you have a flavor explosion! Bring on Meatless Monday!





 



Ingredient Breakdown

  • Pita, Naan or Tortillas- however you like your wraps! You're the boss, applesauce.

    • I searched high and low for Pita this week and both of my grocery stores were sold out! Turns out it was Greek Easter this weekend and Pita goes great with Lamb (source: my very very Greek coworker).

  • Artichoke Hearts

    • My favorite are the quartered, soaked in brine!

  • Cannellini White Beans

    • You can use any white bean your heart desires!

  • Arugula

  • Sundried tomatoes

    • I suggest using sundried tomatoes packed in oil (I did not have any for this recipe). sprinkle a little bit of the oil into the salad mixture and it will take it to the next level!

  • Salt

  • Feta cheese

  • Large lemon (3 tbsp)

  • Garlic

  • Water

    • You may need to use more than the recommended 1/2 cup to make your sauce the consistency you'd like!
