Buffalo Devilled Eggs | Keto | Vegetarian | 4 ingredients

I have a confession to make. I hate eggs. They're gross, mushy and I have such a hard time eating them on their own. My husband, Daniel, is the complete opposite. No lie, that man could probably live on eggs and eggs alone. I don't get it. Eggs are gross. That is, except devilled eggs. I can eat an entire plate of them for some reason. I started making these buffalo devilled eggs practically on a weekly basis when I was strictly following a keto diet. They're the perfect quick snack-- the buffalo makes you feel like you're something way more indulgent when in reality you're getting a huge punch of protein! They make a good meat-free healthy game day snack! These buffalo deviled eggs are keto-friendly, vegetarian, and if you exclude the blue cheese they can be adapted to be Whole 30 and Paleo!



 

My favorite method to make hard-boiled eggs



I have another confession, I don't actually know how to properly make hard-boiled eggs. I never have and honestly, I probably never will. I have used an egg cooker for close to 10 years now and have never once tried to learn. And, when looking to get the link to share with you, Amazon has informed me that I have purchased the Dash Rapid Egg Cooker 3 times and have zero shame admitting that. I know for a fact that two of those purchases were as gifts and we love it so much we even registered ourselves for a new one on our wedding registry! In fact, the 35,000 4.5 stars on Amazon makes it seem like the rest of the world agrees!


This little baby can cook 6 eggs at a time. It comes with a cup to fill with water that has lines for if you want soft, medium, or hard-boiled eggs. You fill up the cup to the line of preference, dump it into the bottom, poke holes in the eggs with the pin at the bottom of the cup (this allows for MUCH easier peeling), turn the thing on and it will play a nice little tune when all of the water has evaporated and the eggs are done cooking! Did I mention it's only $19?!

Save yourself the time and energy-- I cannot recommend this lil cooker any more! It's especially good for meal prep!

Franks Red Hot or Franks Wing Sauce

Mayo

Blue Cheese (omit for Whole 30 and Paleo)

Paprika for color (optional)
