One-Pot Salsa Chicken and Rice



What's better than minimal dishes to clean and almost zero effort dinners that basically make themself! This recipe for my One Pot Salsa Chicken and Rice is quick and convenient for a weeknight dinner but still deliver flavor, and isn't another night of take out!



This one-pot dinner combines chicken, rice, salsa, and broth! I'm sure you couldn't figure that out from the title! Once you stir everything in you can walk away (don't lift the lid!!!) until it's finished cooking! Daniel had three helpings of this, and I had two! It's filling and guaranteed to be a hit!




Grocery List


-8-12 oz salsa- I use Trader Joe's Roasted Tomatillo Salsa Verde- pick one your family loves!

-1.5 lbs Chicken- thighs or breasts both work great!

-1 cup Long grain rice (Basmati, Jasmine)


Pantry Items

-Cumin

-Chili Powder

-Dried Oregano

-Garlic Powder

-Onion Powder

-S&P

-Chicken broth OR Water
