It’s Pumpkin Season

Every September when the weather starts to cool down, I always fall back onto the pumpkin train because... who doesn’t like pumpkin?! Pumpkin spice lattes, pumpkin breakfasts foods, even pumpkin pastas! But my favorite, pumpkin bars!

Today, I am bringing you my favorite pumpkin bars that I love to make but I made them slightly “healthier”

By healthier, I mean an alternative to Sugar, Oil, and Dairy!

Coconut sugar is an easy 1:1 alternative to granulated sugar. It has a lower glycemic index which means it will not impact your blood sugar as much as granulated sugar would. It also has some added nutrition to it and not just empty calories as sugar does.

Coconut oil is an easy 1:1 to vegetable oil and has a lot more benefits compared to vegetable oil.

Dairy is that one ingredient that I love but always regret after eating it. I am really working hard to try and eliminate it from my diet completely. It is amazing the amount of alternatives there are out and so many more to be discovered for baking! This time I substituted coconut cream and sunflower butter!

So lets jump right into it!
