This isn't necessarily a recipe- more like a veggie-packed, mind tricking, Trader Joe's hack! This hack is Keto friendly, veggie-packed, low carb, gluten-free and hassle-free.
I am starting to think that this blog is going to become my personal diary where I combat my mom's weird eating habits. There are so many to dissect. I don't blame her-- she grew up in the peak of insane diet culture. The era of fat is bad, carbs are bad all while frozen then microwaved TV dinners were the rage. So, in some ways it's understandable. Anyway, the way she eats burgers has always fascinated me. Her brain has been trained to think the healthy choice is to not eat the bun on a burger. However, she will finish the entire bread basket and an order of fries within the same meal. It's all about balance right?
I won't completely disagree with my mom's logic. My body usually does not agree with wheat-based carbs. I have a much easier time with more whole, minimally processed carbs like rice and potatoes. But if I am going to eat the entire bread basket that's on the table then I am going to commit to eating the bun that comes on a burger and suffer the consequences later. Life's all about choices and I am usually an all-or-nothing type of person. At least my mom serves as a big inspiration for a lot of the recipes I make!
Let's talk about the Trader Joe's Cauliflower Thins!
I've said it before, and I will say it again, I am a Trader Joe's Hoe.
These have been one of my most purchased products from TJ's since they came out last year. They are SO VERSATILE! They cost about $3.99 and contain 4 Cauliflower Thins. I know a while back Cauliflower everything was all the rage- and I will never stop using cauliflower as a healthy replacement because if you can- why wouldn't you? Your brain thinks you're eating something really indulgent when in reality you're eating vegetables!
The ingredients in the Cauliflower Thins are:
Cauliflower
Egg
Parmesan Cheese
Yeast
THAT'S IT! The calorie count for 2 "slices" comes in at only 100 cal, 9g of protein, and only 1 net carb! What is this kind of sorcery! Compared to two slices of a regular wheat-based bun that is 300 calories, 8g of protein, and 54 net carbs-- I'd say that this is an easy swap decision!
I'll be completely honest- they're not a perfect substitute for a pillowy wheat-based bun, but there's something about the ritual of picking up a burger with your hands and eating it that the experience is unmatched. I prefer burgers 100x more with the Cauliflower Thins than I do with a lettuce wrap bun or eating it bunless with a fork and knife- blehhh. Believe me, I have tried it all.
These also substitute well for tortillas, sandwich bread, mini pizzas, or as the base for a good avocado toast!! You can find these in the refrigerated section by all the wraps, salads, and salsas!
